Kid Friendly, 2 Ingredient, Mini Apple Pies Inspired by “Hungry Bunny”

This cute little fellah is back! Do you remember him from “Bunny Slopes”?  If you don’t run and check that one out right away!  “Bunny Slopes” is an interactive book where you help him ski and in this sequel it is apple season and you help him pick and deliver some apples to his mom so she can bake apple pie.  It is just as fun as “Bunny Slopes” and his expressions along with the invitation to help is just so fun!

One difference is that this book has a ribbon bookmark and you actually get to utilize it by placing it on the illustrations as directed a couple of times to help our bunny friend out.  I haven’t personally seen another interactive book that uses a ribbon bookmark yet so I thought that was an especially delightful feature.  My kids adore this one and we have already read it quite a few times.

2 Ingredient, Kid Friendly, Mini Apple Pies

After going through all that work to help him pick and deliver apples you kind of find yourself craving a red, ripe apple yourself.  Then when you get to the final illustration that says “We saved a piece for you.” you really wish you had a slice of apple pie to eat.  That is why I thought a book recipe was in order for this story.  I opted for these super simple, 2 ingredient, mini apple pies because I wanted something quick and easy enough that my kids could make them with me.

 

My oldest is four and my youngest is two and they both had a blast making these!  Their favorite part was punching out the leaves to place on top.  That and eating them of course!  It was so much fun to have them in the kitchen with me having an interactive baking experience after reading such a cute interactive book.  Definitely something that we will have to do again soon!

Easy Mini Apple Pies

  • Prep Time: 15m
  • Cook Time: 30m
  • Total Time: 45m
  • Yield: 12 mini pies

Ingredients

  • 1 box of 2 pre made pie crusts
  • 1 can of pre made apple pie filling (20 oz)

Instructions

  1. Preheat the oven to 425 degrees fahrenheit and using nonstick cooking spray, grease your muffin tin.
  2. Flour a flat baking surface and roll out your pre-made pie crusts. Then, using a 4 inch round fluted cutter, cut the bottom crusts of your mini pies. Place them in the bottoms of your muffin tin. They will crinkle and fold a bit when they go in. That is okay.
  3. Open the can of pie filling and using knife roughly chop the apple slices. Then, using a spoon, fill each "pie crust cup" with the chopped apple filling. Fill them until they are just about full.
  4. Using the remaining pie crust dough, cut out small stars, leaves, flowers or whatever shape you desire and place them on top of your mini pies as a top crust.
  5. Place on the bottom rack of your oven and bake for 30 minutes until the crusts are slightly golden brown.
  6. Allow to cool on a baking rack to desired temperature.
