Dr. Seuss inspired Truffula Tree Cupcakes

Ingredients

Chocolate Cake

  • 1 box chocolate cake mix
  • 1 1/4 cups milk
  • 3 eggs
  • 1/4 cup sour cream
  • 2 tablespoons vegetable oil

Butter Cream

  • 1 1/2 cups butter (3 sticks)
  • 3 tablespoons heavy whipping cream
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar

"Truffula" trees

  • 12 paper straws, black and white striped
  • cotton candy for tops (4oz is more than plenty)

Instructions

  1. Preheat oven to 350 degrees fahrenheit.
  2. In a large bowl mix together cake mix, milk, eggs, vegetable oil, and sour cream. Beat on medium speed for 2 minutes. Then, scoop the batter into cupcake liners about 2/3 full and bake for 14-16 minutes until toothpick comes up clean from the center.
  3. Next prepare the frosting. In a large bowl, beat the butter for 5 minutes until light colored and fluffily. Add the heavy cream and vanilla then beat for another 3 minutes. Slowly add the powdered sugar, scraping down the sides as you go, and beat for another 5-6 minutes until fluffy. Add green food coloring until it reaches the desired shade of green and mix until evenly colored.
  4. After the cupcakes have cooled pipe the frosting on using a "grass" tip and set aside. Assemble your "truffula" trees by rolling small amounts of cotton candy gently into a loose ball and placing on the top of paper straws (previously cut in half).
  5. Once your "trees" are complete top your cupcakes with them and you are done!
