Easy Apple Cake

Ingredients

  • 1 cup sugar
  • 3 large eggs
  • 4 tablespoons softened butter
  • 1 1/2 cups flour
  • 2 teaspoons cinnamon (heaping)
  • 1/4 cup raisens
  • 3 small apples (I used Gala)

Instructions

  1. Preheat oven to 350 degrees fahrenheit and grease and flour a 9" cake dish with butter.
  2. Prepare the apples by coring and slicing them. (You can also peel them if desired, but I like to leave the peels on mine because they give the slices more structure and create a more "rustic" look when baked. Either way is fine.)
  3. In a medium bowl mix together sugar, eggs and butter with an electric mixer on medium speed until light and fluffy.
  4. In a separate bowl, mix together flour, cinnamon and raisins with a whisk until combined.
  5. Slowly mix the dry ingredients into the wet ingredients bowl with a spoon. Then scoop your batter into your prepared cake tin and spread with a spatula.
  6. Take your apple slices and place them on top of your batter in a circular pattern around your cake dish. Mine fit one circle around the edge with a smaller circle inside and two slices to fill the center.
  7. Bake for 50-55 minutes until the edges are lightly browned and pulling away from the sides of the pan. A toothpick should come up clean from the center.
  8. Once cooled, sprinkle powdered sugar on top if desired.
